Canadian Wild Blueberry Muffins


Dry Ingredients:
1 cup gluten free flour
1 cup all purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/3 cup hemp hearts
 
Wet Ingredients:
2 small bananas
1 egg or flax egg (1 tbsp flax meal 2 tbsp water)
1 tsp vanilla extract
1 1/2 cups almond milk (Add 1/4 cup to make it a bit more wet if you’d like)
1 cup Canadian wild blueberries (frozen or fresh)
 
Optional:
1/3 cup unsweetened coconut flakes
1/3 cup raisins
1/3 cup ground flax meal
Agave to taste
 
Directions:
Add the wet then the dry ingredients into your Vitamix. Blend on low then turn it up half way. Stir in the wild blueberries. Pour into muffin liners spritzed with coconut oil spray. Bake at 350 degrees for 20-25 minutes, or until done. Let them cool and then enjoy with your family. Bon Appétit.
