In anticipation of my beach getaway, I’ve been trying not to stuff myself full of sweets. Can I tell you how difficult that is when you have an intense sweet tooth? One of my favourite dessert is strawberry rhubarb crisp and lately I’ve been modifying the recipe to make it a bit more healthy and kinder to my waistline. Bye bye for now butter, my old faithful friend; and a hearty hello to this low fat version of an old classic. I call it my Quick and Easy Granola Crisp. I hope you enjoy.
INGREDIENTS
1 cup frozen mixed berries
1 cup frozen mangoes
1/2 cup apple juice
1/2 cup raisins
1 1/2 teaspoon all-purpose flour
1 1/2 teaspoon pumpkin pie spice
2 cups granola
DIRECTIONS
- Preheat the oven to 350°F. Combine the frozen berries, mangoes and raisins then pour into an eight inch square baking dish.
- In a small bowl, whisk together the apple juice, flour, and pumpkin pie spice. Pour over the fruit. Sprinkle the granola evenly over the fruit and lightly press down.
- Bake until hot and bubbly, 40 to 45 minutes. Serve warm.
